What is sourdough?

Sourdough bread is made using a live culture of yeast and bacteria.

These yeasts and bacteria are responsible for the fermentation of flour and water into what we know as bread.

Each sourdough culture is different, being a diverse and dynamic collection of yeast and bacteria.  Sourdough ferments more slowly, but results in more complex and delicious flavors than standard yeast.  It also ferments the sugars and proteins more completely during the long fermentation. This unlocks more of the nutrients in wheat and makes sourdough bread easier for people to digest.

With a longer fermentation, more of the protein gluten is pre-digested by the sourdough culture.  Gluten is hard to break down, so any help from the microbes is much appreciated by our digestive system. All of Meg’s Bread uses a sourdough culture to transform flour, water, and salt into delicious, nutritious bread.

Where can I find Meg’s Bread?

The Bakery is Located at 52 S. Cedar in Cookeville, TN

What ingredients are in your sourdough bread?

All of the bread is made with just flour, salt, wild yeast and water. I do not add any milk or eggs to by bread, unless you order a cheese bread which has…cheese!

I want my bread sliced, can you slice it for me?

Yes! Just ask when you come to purchase your loaf from the bakery and we would be happy to slice your bread for you. Our sandwich loaves come pre-sliced for your sandwich-making needs. If you would rather slice your bread at home, our round loaves or boules—the French word "boule" means ball or round—are a more rustic loaf that can easily rip apart or cut with a good bread knife.

Does your bread freeze well?

Yes! I have had many customers tell me they pre-slice their bread, put it in a plastic bag and freeze it. Either take what you want out and toast it or take the whole loaf out and let it thaw in the bag. (Once thawed place it in your oven at 350* for 10 mins.)

What kind of flour do you use?

We use King Arthur Bread Flour for our white flour and Carolina Ground for all of our wheat flour and pastry flour.
